According to a PUBMED paper titled "Chitin and Its Effects on Inflammatory and Immune Responses" (at https://pubmed.ncbi.nlm.nih.gov/28251581/ ):

CHITIN, which comprises the EXOSKELETON OF MANY INSECT-SPECIES, is known to be "a potential allergy-promoting pathogen-associated molecular pattern (PAMP)" that, if EATEN BY A MAMMAL -- SUCH AS BY A HUMAN -- "is considered as a potential target for recognition by mammalian immune system. Chitin is sensed primarily in the lungs or gut where it activates a variety of innate (eosinophils, macrophages) and adaptive immune cells (IL-4/IL-13 expressing T helper type-2 lymphocytes). Chitin induces cytokine production, leukocyte recruitment, and alternative macrophage activation."

IN OTHER WORDS, CHITIN IS GENERALLY TOXIC TO HUMANS.

I've read that CHITIN is used in a few specific, targeted, medical procedures BUT EATING BUGS IS NOT ONE OF THEM -- and that for a HUMAN to eat BUGS -- i.e., CHITIN -- can be DANGEROUS TO ONE'S HEALTH.

And that DANGER is IN ADDITION to eating bugs likely loaded with PARASITES.
