I think it is that they use fresh ingredients with no additives. You go to Italy and there's barely any frozen food. Everything is fresh all the time.
And little old ladies still ride their ancient gear-less bicycles to the piazze every morning to buy their daily bread and fresh meat and produce.
Then pedal home again with their groceries on the handlebars to cook lunch.
My family in Italy cooks everything fresh every day - even the 'handful' of pasta💝
