They have parasites; and, apparently, many people are allergic to crickets.

Chitin and Its Effects on Inflammatory and Immune Responses

Increased secretion of chitinases is closely associated with pathophysiological conditions dominated by T-helper type 2 cells (Th2) including infection, fibrosis, allergy, and asthma [ 64, 65 ]. Chitin exposure directly stimulates expression of the pro-Th2 mediators AMCase and eotaxin-3 in cultures of sinonasal epithelial cells [ 66 ].

The potential role of chitin in allergic reactions - ScienceDirect

Allergic immune response to chitin or the helminth N. brasiliensis in the lung. Infection with helminths or chitin alternatively activates macrophages, causing upregulation of chitinolytic and chitin-binding proteins. Secretion of leukotriene B 4 recruits innate immune cells such as eosinophils and basophils, and might initiate a Th2 response.

Chitin, Chitinases and Chitinase-like Proteins in Allergic Inflammation ...

When viewed in combination, chitin or allergen modulated the expression of chitinases or chitin-binding proteins, and these chitinases may have a direct protective role against chitin by degrading the chitin itself, but also may function to amplify inflammatory responses against chitin or other allergens.

Crickets have parasites. You can see YouTube videos of parasites coming out of crickets.
